Beijing Duck
Once upon a time, Beijing was called Peking. Therefore, in some places, you may read from the menu as Peking Roast duck.
This is a popular way of serving duck. I think it is a wasteful way, as the skin of the duck is sliced thinly infront of you.
Then you eat it with thin strips of cucumber, spring onion, a sauce and wrap in a small disc of pastry. While the duck carcass still has the delicious duck meat, the waitress whisks it away.
